Our Organic Roasted Iron Goddess of Mercy (Tie Guan Yin) hails from the hills of Gande town, where organic farming techniques of growing many wild flowers around the tea bushes are used, to attract the insects away from the growing tea, whilst also giving the tea its complex aroma. The tea leaves are slowly roasted to a medium level giving it it's crisp, toasty aromas, notes of fruitiness and hints of cocoa. A special oolong, it's earlier steeps show a sweeter profile, moving on to more cinnamon notes as the tea develops during each infusion.
Per cup: 1 tsp 90°C 4 minutes
Can be infused up to 7 times.
For oolongs we prefer the gong fu method of brewing, using a larger amount of leaf and shorter gradually increasing steeping times of 30 seconds.
Our Organic Baked Iron Goddess of Mercy (Tie Guan Yin) is a medium roast oolong specifically chosen for balance between the hearty flavours of toasted grains and roasted almond and a honeyed character.
Roasting Tie Guan Yin so as not to ruin the flavour produced from the previous process of drying, wilting, oxidising and rolling the tea requires a lot of skill and patience from tea caftsmen. During the roasting process, the tea will be roasted 3 times for over 8 hours of each time. The tea master must carefully control the temperature and judge the tea’s quality with his experience.
